Today's recipe is a simple Pasta Bake, however, the sauce gives this dish a lovely twist.
I made this for a family of four so you can adjust the quantities accordingly. Start with some dried pasta, any pasta will do, I used Penne (375gm). Cook the pasta 'al dente' - this is quite important because there will be more pasta cooking when the dish goes into the oven. Grate 100gm of a strong cheese (I used Strong Cheddar) and cube 100gm of blue cheese (I used St Agur) - I think you can easily change these cheeses and get a new taste and I will definitely be trying out a few different options in the future.
Prepare a sauce by combining 200ml white wine, 300 ml whipping cream, few drops of Tabasco sauce , half the cheese and few sprigs of thyme (I just rinsed the sprigs straight from the garden, no prep required. The sauce will be quite thin, I was worried at this point that the sauce should thicken, it doesn't so don't worry. Gently heat all these ingredients, stiring all the time, by which time your pasta should have cooked. Greese a casserole dish, add the pasta and pour over the sauce. Sprinkle the rest of the cheese over the pasta and cover with foil. Bake in oven for 30mins @ Gas Mark 4/180C. Remove the foil and cover the top with sliced tomatoes and return to the oven (uncovered) for 10 mins. Sprinkle with chopped fresh parsley and serve with crusty bread.
All the boys loved this dish and I did too. Easy, peasy to prepare and not much washing up. The sauce is delicious and served with crusty bread it's quite a substantial meal.
Our name is to be The Baked Pasta Dish, it got 18/20 - not sure where it lost the marks ? (no reasons given). Loved this meal and will be including this, often. Hope you give it a go.
